Poor Man's Lobster (4-6 servings)

3 quarts water; 1 medium onion; 3 stalks celery, chopped; 1/2 cup lemon juice; 3 tablespoons salt; 1 bay leaf; 3 pounds lawyers (eelpout/burbot/ling cod) cut into 2-inch pieces; 1/2 pound butter; 2 cloves garlic; Paprika.

In large kettle, boil water, onion celery, lemon juice and salt for 4 minutes. Add bay leaf and burbot. Boil for 3 minutes. Remove fish. Place on cookie sheet. Brush with melted garlic butter. Sprinkle with paprika. Broil for 2 minutes. Serve with melted garlic butter. (modified slightly from Brataas, 1996)
